Happy (almost) New Year! While not the first New Year’s that Bry and I have spent in Denver together, this year does feel different in that by saying goodbye to 2017 it feels like finally closing the Boston chapter in our lives. As much as I miss our friends and family back East, I can safely say that at least weather-wise I’ll be happy not to be in Boston for New Year’s – it’s supposed to be like 4 degrees at midnight there!!

While Denver won’t be warm and tropical either, I can at least pretend to be somewhere warm with these coconut yogurt overnight oats. Now before I start gushing about these oats, I want to clarify that I am not an ambassador for Siggis and will not be making any money from them for this post. I simply love Icelandic-style yogurt. Not only is there more protein than sugar in their yogurts (a serious nutrition-win!), but the flavors are so subtle and natural and the texture so creamy that it really feels like an indulgence eating a Siggi’s yogurt. Seriously, look how creamy this yogurt is! (Don’t be afraid of 2% fat, it will help keep you fuller for longer!) 

I got the idea for these oats during one of my 3pm snack breaks. I had packed Siggi’s coconut yogurt and with each bite I kept thinking how delicious it would be with oats (and yes, I realize only an oatmeal-addict would be daydreaming about perfect flavor combinations for overnight oats). To make these, I simply subbed in the coconut Icelandic yogurt for the plain Greek yogurt and nixed the peanut butter. While tasty, when I went to take pictures it just seemed too bland. The healthy and more tropical option would have been to put some pineapple, kiwi, or berries on top (which I highly recommend trying), but I’ve been digging the chocolate-coconut combo lately so I reached for a bag of mini chocolate chips instead. Choose whichever topping you like – but you know what my preference would be ;).

Ingredients

  • 1 cup rolled oats
  • 2 Tbsp chia seeds
  • 1 5.3- oz container 2% fat coconut Siggi’s yogurt or other Greek or Icelandic-style coconut yogurt
  • 1 cup unsweetened vanilla almond or coconut milk
  • 2 tsp mini chocolate chips optional
  • Other optional topping ideas: pineapple kiwi, berries, flaked coconut, nut butter

Instructions

  • Place ½ cup oats, 1 Tbsp chia seeds, ½ cup almond or coconut milk, and half the container of yogurt into each mason jar/Tupperware container. Stir well to combine. Add toppings of choice then seal with a lid.
  • Place in fridge overnight, then grab and go in the morning.

Nutrition for 1/2 of recipe (including chocolate chips): 320 calories, 3 g saturated fat, 42 g carbohydrate, 10 g fiber, 8 g sugar, 16 g protein
